Semolina cake




Ingredients needed

  • Butter-  ½ cup (unsalted) melted 

  • Powdered sugar - ¾ cup or 1 cup

  • Semolina - 1 ½  cup

  • Plain flour / refined flour -  ½  cup

  • Pinch of salt

  • cardamom powder - ¼ tsp

  • Curd / yogurt - ¼ (whisked)

  • Milk - 1 cup (adjust consistency)

  • Baking powder - ¾ tsp 

  • Baking soda - ½ tsp 

  • A handful of dry fruits - chopped almonds, pistachios, cashews

Instructions

  • Firstly, in a large mixing bowl take ½ cup melted butter.

  • Also, add ¾ cup of powdered sugar. add 1 cup for more sweetness.

  • Whisk continuously, till the mixture turns silky smooth.

  • Further add 1½ cup semolina, ½ cup plain flour, salt to taste and cardamom powder.

  • Additionally, add ¼ cup curd and ¾ cup milk.

  • Mix well add milk if required to adjust the consistency.

  • Pour ¼ cup more milk over top and level it up. This prevents from drying.

  • Allow soaking for 30 minutes.

  • Now mix well and adjust to dropping consistency by adding milk if required.

  • Also, add ¾ tsp baking powder and ½ tsp baking soda.

  • Furthermore, add a handful of dry fruits.

  •     Mix well making sure everything is combined well. Do not over mix.

  •  Meanwhile, preheat the microwave in convection mode/oven to 180°c for 10      minutes and transfer the cake batter to a cake mould (dia: 7 inches, height: 4 inches). Make sure to line a butter paper at the bottom to prevent from sticking.

  • Tap twice to level up uniformly and remove any air bubbles if present.

  •  Bake the cake at 180-degree Celsius or 356 degrees Fahrenheit for 40 minutes.

  • To check the cake has baked completely, always insert a toothpick at the centre and see if it comes out clean. Else bake for 5 more minutes.

  • Further, cool down the cake completely. Also, transfer the cake to a cooling rack to cool faster. Serve the cake :)
